- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Gluten-free breadcrumbs - 3 tablespoons
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced red bell pepper, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until the bell pepper is tender.
- Remove the skillet from heat and mix in the chopped parsley, gluten-free breadcrumbs, and crumbled feta cheese if using. Allow the mixture to cool slightly.
- Use the filling to stuff gluten-free pastry or phyllo dough, folding or rolling them according to preference. Seal the edges well.
- Place the stuffed pastries on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for 20 minutes or until golden brown.
