Ingredients

  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Gluten-free breadcrumbs - 3 tablespoons
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  2. Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the diced red bell pepper, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until the bell pepper is tender.
  4. Remove the skillet from heat and mix in the chopped parsley, gluten-free breadcrumbs, and crumbled feta cheese if using. Allow the mixture to cool slightly.
  5. Use the filling to stuff gluten-free pastry or phyllo dough, folding or rolling them according to preference. Seal the edges well.
  6. Place the stuffed pastries on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for 20 minutes or until golden brown.
