Ingredients

  • Gluten-free all-purpose flour - 200g
  • Warm water - 100ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Spinach - 150g (fresh or frozen)
  • Feta cheese - 100g, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Black pepper - 1/4 teaspoon
  • Egg - 1 (for egg wash)

Steps

  1. In a bowl, combine the gluten-free flour and salt. Gradually add the warm water and 1 tablespoon of olive oil, mixing until a dough forms. Knead the dough for about 5 minutes until smooth.
  2. Cover the dough with a damp cloth and let it rest for 15 minutes.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
  4. Add the spinach to the skillet and cook until wilted. If using frozen spinach, cook until heated through. Remove from heat and let cool slightly.
  5. Once the spinach mixture is cool, mix in the crumbled feta cheese and black pepper. Set aside.
  6. Preheat the oven to 200°C (400°F).
  7. Divide the dough into two equal portions and roll out each portion on a lightly floured surface into thin circles (about 20cm in diameter).
  8. Place half of the spinach and feta mixture on one half of each dough circle, leaving a border. Fold the other half over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
  9. Beat the egg and brush the tops of the börek with the egg wash.
  10. Place the börek on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown and crispy.
