Ingredients
- Gluten-free all-purpose flour - 200g
- Warm water - 100ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Spinach - 150g (fresh or frozen)
- Feta cheese - 100g, crumbled
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Black pepper - 1/4 teaspoon
- Egg - 1 (for egg wash)
Steps
- In a bowl, combine the gluten-free flour and salt. Gradually add the warm water and 1 tablespoon of olive oil, mixing until a dough forms. Knead the dough for about 5 minutes until smooth.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
- Add the spinach to the skillet and cook until wilted. If using frozen spinach, cook until heated through. Remove from heat and let cool slightly.
- Once the spinach mixture is cool, mix in the crumbled feta cheese and black pepper. Set aside.
- Preheat the oven to 200°C (400°F).
- Divide the dough into two equal portions and roll out each portion on a lightly floured surface into thin circles (about 20cm in diameter).
- Place half of the spinach and feta mixture on one half of each dough circle, leaving a border. Fold the other half over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
- Beat the egg and brush the tops of the börek with the egg wash.
- Place the börek on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown and crispy.
