Ingredients

  • phyllo dough - 6 sheets
  • spinach - 200 grams, fresh or frozen
  • tofu - 150 grams, firm
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • olive oil - 2 tablespoons
  • nutritional yeast - 2 tablespoons
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • lemon juice - 1 tablespoon
  • sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add the spinach to the pan and cook until wilted. If using frozen spinach, ensure it's fully thawed and any excess water is removed.
  4. Crumble the tofu into the pan, then stir in nutritional yeast, salt, black pepper, and lemon juice. Mix well and cook for another 5 minutes. Remove from heat and let it cool.
  5. Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat this for a total of 3 sheets.
  6. Spoon a portion of the spinach-tofu mixture along one edge of the phyllo stack. Roll it up tightly to form a log, tucking in the edges as you go.
  7. Place the rolled börek on a baking sheet lined with parchment paper. Brush the top with olive oil and sprinkle sesame seeds on top.
  8. Repeat the process with the remaining phyllo and filling.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before slicing and serving.
