Ingredients
- phyllo dough - 6 sheets
- spinach - 200 grams, fresh or frozen
- tofu - 150 grams, firm
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- olive oil - 2 tablespoons
- nutritional yeast - 2 tablespoons
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- lemon juice - 1 tablespoon
- sesame seeds - 1 tablespoon (for topping)
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add the spinach to the pan and cook until wilted. If using frozen spinach, ensure it's fully thawed and any excess water is removed.
- Crumble the tofu into the pan, then stir in nutritional yeast, salt, black pepper, and lemon juice. Mix well and cook for another 5 minutes. Remove from heat and let it cool.
- Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat this for a total of 3 sheets.
- Spoon a portion of the spinach-tofu mixture along one edge of the phyllo stack. Roll it up tightly to form a log, tucking in the edges as you go.
- Place the rolled börek on a baking sheet lined with parchment paper. Brush the top with olive oil and sprinkle sesame seeds on top.
- Repeat the process with the remaining phyllo and filling.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing and serving.
