Ingredients
- Phyllo dough - 6 sheets
- Fresh spinach - 200 grams, chopped
- Mushrooms - 100 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Sesame seeds - 1 tablespoon (for topping)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and chopped mushrooms to the skillet, cooking until the mushrooms are soft and any moisture has evaporated.
- Stir in the chopped spinach, nutritional yeast, salt, black pepper, and paprika. Cook for an additional 3-4 minutes until the spinach is wilted. Remove from heat and let cool slightly.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
- Spoon a portion of the filling along one edge of the phyllo dough, then roll it up tightly into a log shape. Seal the edges by pinching them together.
- Repeat the process with the remaining sheets of phyllo and filling, placing the rolled börek on a baking sheet lined with parchment paper.
- Brush the tops of the börek with a little olive oil and sprinkle with sesame seeds.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crisp.
- Remove from the oven, let cool for a few minutes, and serve warm.
