Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 200 grams, chopped
  • Mushrooms - 100 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and chopped mushrooms to the skillet, cooking until the mushrooms are soft and any moisture has evaporated.
  4. Stir in the chopped spinach, nutritional yeast, salt, black pepper, and paprika. Cook for an additional 3-4 minutes until the spinach is wilted. Remove from heat and let cool slightly.
  5. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
  6. Spoon a portion of the filling along one edge of the phyllo dough, then roll it up tightly into a log shape. Seal the edges by pinching them together.
  7. Repeat the process with the remaining sheets of phyllo and filling, placing the rolled börek on a baking sheet lined with parchment paper.
  8. Brush the tops of the börek with a little olive oil and sprinkle with sesame seeds.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown and crisp.
  10. Remove from the oven, let cool for a few minutes, and serve warm.
