Ingredients
- Phyllo dough - 200 grams
- Walnuts, finely chopped - 100 grams
- Almonds, finely chopped - 50 grams
- Sugar - 50 grams
- Ground cinnamon - 1 teaspoon
- Plant-based butter, melted - 80 grams
- Water - 200 ml
- Lemon juice - 1 tablespoon
- Agave syrup - 3 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the chopped walnuts, chopped almonds, sugar, and ground cinnamon. Mix well and set aside.
- Take one sheet of phyllo dough and brush it with melted plant-based butter. Layer two more sheets on top, brushing each with butter.
- Cut the layered phyllo into strips (about 5 cm wide).
- Take one strip, place a tablespoon of the nut mixture at one end, and fold the sides over the filling. Roll it up tightly to form a nest shape, tucking the ends underneath.
- Repeat the process with the remaining phyllo and nut mixture, placing the nests on a baking tray lined with parchment paper.
- Brush the tops of the nests with any remaining melted plant-based butter.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- While the nests are baking, prepare the syrup by combining water, lemon juice, and agave syrup in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Once the nests are done baking, remove them from the oven and immediately pour the warm syrup over them. Allow to soak for a few minutes before serving.
