Ingredients

  • Phyllo dough - 200 grams
  • Walnuts, finely chopped - 100 grams
  • Almonds, finely chopped - 50 grams
  • Sugar - 50 grams
  • Ground cinnamon - 1 teaspoon
  • Plant-based butter, melted - 80 grams
  • Water - 200 ml
  • Lemon juice - 1 tablespoon
  • Agave syrup - 3 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the chopped walnuts, chopped almonds, sugar, and ground cinnamon. Mix well and set aside.
  3. Take one sheet of phyllo dough and brush it with melted plant-based butter. Layer two more sheets on top, brushing each with butter.
  4. Cut the layered phyllo into strips (about 5 cm wide).
  5. Take one strip, place a tablespoon of the nut mixture at one end, and fold the sides over the filling. Roll it up tightly to form a nest shape, tucking the ends underneath.
  6. Repeat the process with the remaining phyllo and nut mixture, placing the nests on a baking tray lined with parchment paper.
  7. Brush the tops of the nests with any remaining melted plant-based butter.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  9. While the nests are baking, prepare the syrup by combining water, lemon juice, and agave syrup in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
  10. Once the nests are done baking, remove them from the oven and immediately pour the warm syrup over them. Allow to soak for a few minutes before serving.
