Ingredients
- Plain yogurt - 400 grams
- Water - 1 liter
- Rice - 50 grams
- Cucumber - 1 medium, grated
- Fresh mint - 2 tablespoons, chopped
- Dried mint - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, combine the rinsed rice and 500 ml of water, and bring to a boil over medium heat.
- Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water has been absorbed.
- In a large bowl, whisk together the yogurt and 500 ml of cold water until smooth and creamy.
- Once the rice is cooked, allow it to cool slightly, then add it to the yogurt mixture.
- Stir in the grated cucumber, chopped fresh mint, dried mint, olive oil, salt, and black pepper, adjusting seasoning to taste.
- Chill the soup in the refrigerator for about 15 minutes before serving.
- Serve in bowls, garnished with additional fresh mint if desired.
