Ingredients
- Purple turnips - 300g
- Carrots - 100g
- Water - 1 liter
- Salt - 20g
- Sugar - 1 tablespoon (15g)
- Black peppercorns - 5
- Fenugreek seeds - 1 teaspoon
- Lemon juice - 2 tablespoons (30ml)
Steps
- Peel and chop the purple turnips and carrots into small cubes.
- In a large pot, combine the chopped turnips, carrots, water, salt, and sugar.
- Add the black peppercorns and fenugreek seeds to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Remove the pot from heat and allow it to cool to room temperature.
- Once cooled, strain the liquid into a clean container, discarding the solids.
- Stir in the lemon juice and cover the container tightly.
- Let the mixture ferment at room temperature for 2 to 3 days, shaking it gently once a day.
- After fermentation, refrigerate the Şalgam before serving.
