Ingredients

  • Purple turnips - 300g
  • Carrots - 100g
  • Water - 1 liter
  • Salt - 20g
  • Sugar - 1 tablespoon (15g)
  • Black peppercorns - 5
  • Fenugreek seeds - 1 teaspoon
  • Lemon juice - 2 tablespoons (30ml)

Steps

  1. Peel and chop the purple turnips and carrots into small cubes.
  2. In a large pot, combine the chopped turnips, carrots, water, salt, and sugar.
  3. Add the black peppercorns and fenugreek seeds to the pot.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. Remove the pot from heat and allow it to cool to room temperature.
  6. Once cooled, strain the liquid into a clean container, discarding the solids.
  7. Stir in the lemon juice and cover the container tightly.
  8. Let the mixture ferment at room temperature for 2 to 3 days, shaking it gently once a day.
  9. After fermentation, refrigerate the Şalgam before serving.
