Ingredients

  • Eggplant - 200 grams
  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Green bell pepper - 100 grams
  • Onion - 1 medium (about 100 grams)
  • Garlic - 2 cloves
  • Tomatoes - 300 grams (fresh or canned)
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Start by cutting the eggplant into small cubes and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture.
  2. While waiting, chop the zucchini and bell peppers into bite-sized pieces. Dice the onion and mince the garlic.
  3. Rinse the eggplant under cold water and pat dry with a paper towel.
  4. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  5. Add the minced garlic and sauté for another minute until fragrant.
  6. Incorporate the chopped zucchini and bell peppers into the skillet and cook for about 5-7 minutes until they begin to soften.
  7. Add the eggplant and continue cooking for another 5 minutes, stirring occasionally.
  8. Chop the tomatoes and add them to the skillet along with salt, black pepper, and paprika. Stir well and let it simmer for about 10 minutes until the sauce thickens.
  9. Once done, taste and adjust seasoning if necessary. Remove from heat and let it cool slightly.
  10. Serve warm or at room temperature, garnished with fresh parsley.
