Ingredients

  • Red bell peppers - 2 medium (about 250g)
  • Walnuts - 100g
  • Garlic - 2 cloves
  • Tomato paste - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Red pepper flakes - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a baking tray.
  3. Roast the peppers in the oven for about 20 minutes, until the skins are blistered and charred.
  4. While the peppers are roasting, toast the walnuts in a dry skillet over medium heat for 5-7 minutes, stirring frequently until fragrant. Allow to cool.
  5. Once the peppers are roasted, remove them from the oven and place them in a bowl, covering it with plastic wrap for about 10 minutes to steam and loosen the skins.
  6. Peel the skins off the peppers and place the flesh in a food processor along with the toasted walnuts, garlic, tomato paste, olive oil, red pepper flakes, cumin, salt, and black pepper.
  7. Blend until you achieve a smooth consistency, adjusting seasoning to taste.
  8. Transfer the Acuka to a serving bowl and garnish with chopped fresh parsley.
