Ingredients

  • Long green beans - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint leaves - 10 grams, chopped
  • Roasted peanuts - 30 grams, roughly chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Palm sugar - 1 tablespoon
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Salt - to taste

Steps

  1. Bring a pot of water to a boil and blanch the long green beans for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.
  2. In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, chopped cilantro, and mint leaves.
  3. In a small bowl, whisk together the lime juice, soy sauce, palm sugar, chili flakes, and salt until the sugar is dissolved.
  4. Drain the long beans from the ice water and chop them into 2-3 cm pieces. Add the beans to the mixing bowl with the other vegetables.
  5. Pour the dressing over the salad and toss gently to combine all ingredients.
  6. Sprinkle the chopped roasted peanuts on top before serving. Enjoy fresh!
