- Long green beans - 200 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, thinly sliced
- Fresh cilantro - 20 grams, chopped
- Fresh mint leaves - 10 grams, chopped
- Roasted peanuts - 30 grams, roughly chopped
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Palm sugar - 1 tablespoon
- Chili flakes - 1 teaspoon (adjust to taste)
- Salt - to taste
Steps
- Bring a pot of water to a boil and blanch the long green beans for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.
- In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, chopped cilantro, and mint leaves.
- In a small bowl, whisk together the lime juice, soy sauce, palm sugar, chili flakes, and salt until the sugar is dissolved.
- Drain the long beans from the ice water and chop them into 2-3 cm pieces. Add the beans to the mixing bowl with the other vegetables.
- Pour the dressing over the salad and toss gently to combine all ingredients.
- Sprinkle the chopped roasted peanuts on top before serving. Enjoy fresh!
