Ingredients

  • Long green beans - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Agave syrup - 1 teaspoon
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Roasted peanuts - 30 grams, chopped
  • Salt - to taste

Steps

  1. Wash the long green beans and trim the ends. Cut them into 2-inch pieces.
  2. Blanch the green beans in boiling water for 2-3 minutes until tender-crisp, then immediately transfer them to an ice water bath to stop the cooking process.
  3. In a large mixing bowl, combine the blanched green beans, halved cherry tomatoes, diced cucumber, sliced red onion, and chopped cilantro.
  4. In a separate small bowl, whisk together lime juice, soy sauce, agave syrup, chili flakes, and salt to make the dressing.
  5. Pour the dressing over the salad mixture and toss well to combine all ingredients.
