Ingredients

  • Flat rice noodles - 100 grams

  • Red bell pepper - 1 medium, thinly sliced
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Lime - 1, juiced
  • Soy sauce - 2 tablespoons
  • Agave syrup - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Peanuts - 2 tablespoons, crushed (for garnish)

Steps

  1. Cook the flat rice noodles according to package instructions, then drain and rinse under cold water to stop cooking. Set aside.
  2. In a large mixing bowl, combine the sliced cucumber, julienned carrot, and sliced red bell pepper.
  3. Add the cooked rice noodles to the bowl with the vegetables.
  4. In a small bowl, whisk together the lime juice, soy sauce, agave syrup, sesame oil, and chili flakes to create the dressing.
  5. Pour the dressing over the noodle and vegetable mixture, then add the chopped mint and cilantro. Toss well to combine.
