- Lime - 1, juiced
- Soy sauce - 2 tablespoons
- Agave syrup - 1 teaspoon
- Sesame oil - 1 tablespoon
- Peanuts - 2 tablespoons, crushed (for garnish)
Steps
- Cook the flat rice noodles according to package instructions, then drain and rinse under cold water to stop cooking. Set aside.
- In a large mixing bowl, combine the sliced cucumber, julienned carrot, and sliced red bell pepper.
- Add the cooked rice noodles to the bowl with the vegetables.
- In a small bowl, whisk together the lime juice, soy sauce, agave syrup, sesame oil, and chili flakes to create the dressing.
- Pour the dressing over the noodle and vegetable mixture, then add the chopped mint and cilantro. Toss well to combine.
