Ingredients

  • Sweet corn kernels - 200 grams

  • Green onions - 3, chopped
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lime juice - 30 ml
  • Soy sauce - 15 ml
  • Chili flakes - 1 teaspoon
  • Peanuts - 30 grams, crushed
  • Salt - to taste

Steps

  1. In a saucepan, bring water to a boil and add the sweet corn kernels. Cook for about 5 minutes until tender, then drain and let cool.
  2. In a large mixing bowl, combine the cooked corn, diced red bell pepper, diced cucumber, chopped green onions, cilantro, and mint.
