- Shrimp - 200g, peeled and deveined
- Lettuce - 100g, shredded
- Cucumber - 50g, thinly sliced
- Cherry tomatoes - 100g, halved
- Red onion - 30g, finely sliced
- Cilantro - 15g, chopped
- Mint leaves - 15g, chopped
- Thai chili - 1, finely chopped (adjust to taste)
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- In a pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and set aside to cool.
- In a large bowl, combine the shredded lettuce, cucumber slices, cherry tomatoes, red onion, cilantro, mint leaves, and chopped chili.
- In a small bowl, whisk together the lime juice, fish sauce, olive oil, salt, and pepper to create the dressing.
