Ingredients

  • Shrimp - 200g, peeled and deveined
  • Lettuce - 100g, shredded
  • Cucumber - 50g, thinly sliced
  • Cherry tomatoes - 100g, halved
  • Red onion - 30g, finely sliced
  • Cilantro - 15g, chopped
  • Mint leaves - 15g, chopped
  • Thai chili - 1, finely chopped (adjust to taste)
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and set aside to cool.
  2. In a large bowl, combine the shredded lettuce, cucumber slices, cherry tomatoes, red onion, cilantro, mint leaves, and chopped chili.
  3. In a small bowl, whisk together the lime juice, fish sauce, olive oil, salt, and pepper to create the dressing.
  4. Add the cooled shrimp to the salad mixture and pour the dressing over the top. Toss gently to combine all ingredients.
