Ingredients
- Rice noodles - 150 grams
- Chicken breast - 100 grams, sliced
- Shrimp - 100 grams, peeled and deveined
- Fermented red bean curd - 50 grams
- Chicken broth - 500 ml
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Red chili - 1, sliced (adjust to taste)
- Green onions - 2, chopped
- Cilantro - a handful, chopped
- Oil - 1 tablespoon (for cooking)

Steps
- Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
- In a pot, heat the oil over medium heat and sauté the minced garlic until fragrant.
- Add the sliced chicken breast to the pot and cook until no longer pink, about 5 minutes.
- Stir in the shrimp and cook until they turn pink, about 3 minutes.
- Add the chicken broth, fermented red bean curd, soy sauce, and lime juice to the pot. Bring to a simmer.
- Once the broth is simmering, add the soaked rice noodles and sliced red chili. Cook for an additional 5 minutes, until the noodles are heated through.
- Taste and adjust seasoning with salt as needed.
- Serve hot, garnished with chopped green onions and cilantro.
