Ingredients

  • Rice noodles - 150 grams
  • Chicken breast - 100 grams, sliced
  • Shrimp - 100 grams, peeled and deveined
  • Fermented red bean curd - 50 grams
  • Chicken broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red chili - 1, sliced (adjust to taste)
  • Green onions - 2, chopped
  • Cilantro - a handful, chopped
  • Oil - 1 tablespoon (for cooking)
  • Salt - to taste

Steps

  1. Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
  2. In a pot, heat the oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the sliced chicken breast to the pot and cook until no longer pink, about 5 minutes.
  4. Stir in the shrimp and cook until they turn pink, about 3 minutes.
  5. Add the chicken broth, fermented red bean curd, soy sauce, and lime juice to the pot. Bring to a simmer.
  6. Once the broth is simmering, add the soaked rice noodles and sliced red chili. Cook for an additional 5 minutes, until the noodles are heated through.
  7. Taste and adjust seasoning with salt as needed.
  8. Serve hot, garnished with chopped green onions and cilantro.
