Ingredients

  • Glass noodles - 50 grams
  • Shrimp (peeled and deveined) - 150 grams
  • Calamari rings - 100 grams
  • Mussels (cleaned) - 100 grams
  • Red bell pepper (sliced) - 1/2
  • Cucumber (sliced) - 1/2
  • Cherry tomatoes (halved) - 100 grams
  • Red onion (thinly sliced) - 1/4
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime juice - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Chili flakes - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Olive oil - 1 tablespoon

Steps

  1. Soak the glass noodles in warm water for about 15 minutes until softened, then drain and set aside.
  2. In a pot of boiling water, cook the shrimp, calamari, and mussels for about 3-5 minutes until cooked through, then drain and set aside.
  3. In a large mixing bowl, combine the lime juice, fish sauce, chili flakes, and minced garlic to create the dressing.
  4. Add the cooked seafood, softened glass noodles, red bell pepper, cucumber, cherry tomatoes, and red onion to the mixing bowl.
  5. Toss everything together gently until well coated with the dressing.
  6. Garnish with chopped cilantro and drizzle with olive oil before serving.
