  • Fresh cilantro - 1/4 cup, chopped

  • Soy sauce - 1 tablespoon
  • Vegetarian oyster sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Peanuts - 2 tablespoons, crushed

Steps

  1. Soak the glass noodles in warm water for about 10 minutes or until softened, then drain and set aside.
  2. In a large mixing bowl, combine the cucumber, red bell pepper, carrot, red onion, cherry tomatoes, and chopped cilantro.
