Steps
- Soak the glass noodles in warm water for about 15 minutes until softened, then drain and set aside.
- In a pan over medium heat, cook the ground pork until fully cooked and browned, about 5-7 minutes. Remove from heat and let it cool slightly.
- In a large bowl, combine the soaked glass noodles, cooked ground pork, sliced red onion, halved cherry tomatoes, diced cucumber, chopped cilantro, and chopped mint.
- In a small bowl, whisk together lime juice, fish sauce, sugar, and chili flakes to create the dressing.
