- Glass noodles - 100g
- Carrot - 1 medium, julienned

- Red onion - 1 small, thinly sliced
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Lime juice - 3 tablespoons
- Soy sauce - 1 tablespoon
- Agave syrup - 1 teaspoon
- Chili flakes - 1/2 teaspoon
- Salt - to taste
- Water - 1 liter (for boiling noodles)
Steps
- Bring 1 liter of water to a boil in a medium pot.
- Add the glass noodles to the boiling water and cook according to package instructions, usually about 4-5 minutes, until soft. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the julienned carrot, sliced cucumber, red bell pepper, red onion, chopped cilantro, and mint.
- In a small bowl, whisk together lime juice, soy sauce, agave syrup, chili flakes, and salt to create the dressing.
- Add the cooked glass noodles to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients evenly.
