Steps

  1. Wash the long green beans and trim the ends, then blanch them in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to ice water to stop cooking.
  2. In a large bowl, combine the halved cherry tomatoes, sliced red onion, blanched green beans, chopped roasted peanuts, and fresh cilantro.
  3. In a small bowl, whisk together lime juice, fish sauce, grated palm sugar, and finely sliced Thai chili until the sugar dissolves.
