Ingredients

  • Shrimp - 150 grams, peeled and deveined

  • Mussel meat - 100 grams, cleaned
  • Lime juice - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Shallots - 2, thinly sliced
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Cucumber - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Roasted peanuts - 30 grams, crushed
  • Lettuce leaves - for serving

Steps

  1. In a pot of boiling water, add the shrimp and cook for about 2-3 minutes until they turn pink. Remove and set aside.
  2. In the same pot, add the calamari and mussels; cook for about 2-4 minutes until fully cooked. Drain and set aside to cool.
  3. In a large bowl, combine lime juice, fish sauce, chili flakes, and shallots to create the dressing.
  4. Add the cooked seafood, cucumber, and cherry tomatoes to the bowl. Toss gently to combine with the dressing.
  5. Fold in the chopped cilantro and mint leaves, mixing well to incorporate.
  6. Serve the salad on a bed of lettuce leaves and sprinkle with crushed roasted peanuts for crunch.
