- Mint leaves - 2 tablespoons, chopped
- Shallots - 2, thinly sliced
- Chili flakes - 1 teaspoon (adjust to taste)
- Cucumber - 1 small, diced

Steps
- In a pot of boiling water, add the shrimp and cook for about 2-3 minutes until they turn pink. Remove and set aside.
- In the same pot, add the calamari and mussels; cook for about 2-4 minutes until fully cooked. Drain and set aside to cool.
- In a large bowl, combine lime juice, fish sauce, chili flakes, and shallots to create the dressing.
- Add the cooked seafood, cucumber, and cherry tomatoes to the bowl. Toss gently to combine with the dressing.
- Fold in the chopped cilantro and mint leaves, mixing well to incorporate.
- Serve the salad on a bed of lettuce leaves and sprinkle with crushed roasted peanuts for crunch.
