  • Red onion - 1/4 medium, thinly sliced
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Rice flour - 1/2 cup
  • Vegetable oil - for frying
  • Salt - to taste

Steps

  1. Start by preparing the catfish: season the fillets with salt and coat them in rice flour.
  2. Heat vegetable oil in a pan over medium heat and fry the catfish until golden brown and crispy, about 3-4 minutes on each side. Once cooked, remove and drain on paper towels.
  3. In a bowl, combine the julienned mango, carrot, cucumber, red onion, lime juice, fish sauce, and chili flakes. Toss well to mix all the ingredients.
  4. Once the catfish has cooled slightly, break it into bite-sized pieces and gently fold it into the salad.
