Ingredients

  • Pork tenderloin - 200g
  • Lime juice - 30ml
  • Fish sauce - 15ml
  • Chili flakes - 1 tsp
  • Garlic - 2 cloves, minced
  • Cucumber - 1 medium, sliced
  • Cherry tomatoes - 100g, halved
  • Red onion - 1 small, thinly sliced
  • Fresh coriander - 20g, chopped
  • Mint leaves - 20g, chopped
  • Roasted peanuts - 30g, crushed
  • Sugar - 1 tsp
  • Black pepper - to taste

Steps

  1. In a bowl, mix lime juice, fish sauce, chili flakes, minced garlic, sugar, and black pepper to create the dressing.
  2. Slice the pork tenderloin into thin strips and marinate in half of the dressing for 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat and grill the marinated pork for about 3-4 minutes on each side until cooked through.
  4. While the pork is grilling, prepare the salad by combining cucumber, cherry tomatoes, red onion, coriander, and mint in a large bowl.
  5. Once the pork is cooked, let it rest for a couple of minutes before slicing it into bite-sized pieces.
  6. Add the grilled pork to the salad mixture and pour the remaining dressing over the top, tossing gently to combine.
  7. Garnish with crushed roasted peanuts before serving.
