- Pork tenderloin - 200g
- Lime juice - 30ml
- Fish sauce - 15ml
- Chili flakes - 1 tsp
- Garlic - 2 cloves, minced
- Cucumber - 1 medium, sliced
- Cherry tomatoes - 100g, halved
- Red onion - 1 small, thinly sliced
- Fresh coriander - 20g, chopped
- Mint leaves - 20g, chopped
- Roasted peanuts - 30g, crushed
- Sugar - 1 tsp
- Black pepper - to taste
Steps
- In a bowl, mix lime juice, fish sauce, chili flakes, minced garlic, sugar, and black pepper to create the dressing.
- Slice the pork tenderloin into thin strips and marinate in half of the dressing for 15 minutes.
- Preheat a grill or grill pan over medium-high heat and grill the marinated pork for about 3-4 minutes on each side until cooked through.
- While the pork is grilling, prepare the salad by combining cucumber, cherry tomatoes, red onion, coriander, and mint in a large bowl.
- Once the pork is cooked, let it rest for a couple of minutes before slicing it into bite-sized pieces.
- Add the grilled pork to the salad mixture and pour the remaining dressing over the top, tossing gently to combine.
- Garnish with crushed roasted peanuts before serving.
