  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Roasted peanuts - 30 grams, roughly chopped

Steps

  1. Peel the yam and cut it into bite-sized chunks.
  2. Steam the yam chunks for about 15-20 minutes, or until tender. Allow to cool.
  3. In a large bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, and chopped cilantro.
  4. In a small bowl, whisk together the lime juice, fish sauce, chili flakes, and olive oil to create the dressing.
  5. Once the yam has cooled, add it to the salad bowl with the vegetables.
  6. Pour the dressing over the salad and gently toss to combine.
