Ingredients

  • Pork tenderloin - 200 grams
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Palm sugar - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Shallots - 2, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Fresh cilantro - 30 grams, chopped
  • Mint leaves - 30 grams, chopped
  • Roasted peanuts - 30 grams, crushed
  • Lettuce leaves - 4, for serving

Steps

  1. Start by boiling a pot of water. Once boiling, add the pork tenderloin and cook for about 15 minutes until fully cooked through. Remove and let it cool before slicing it thinly.
  2. In a mixing bowl, combine lime juice, fish sauce, palm sugar, and chili flakes to create the dressing. Stir until the palm sugar dissolves completely.
  3. In a large bowl, add the sliced pork, shallots, cherry tomatoes, cucumber, cilantro, and mint leaves. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  4. Taste and adjust seasoning if necessary, adding more lime juice or fish sauce according to your preference.
  5. Serve the salad on a bed of lettuce leaves and sprinkle crushed roasted peanuts on top for added crunch.
