- Pork tenderloin - 200 grams

- Palm sugar - 1 tablespoon
- Chili flakes - 1 teaspoon
- Shallots - 2, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Fresh cilantro - 30 grams, chopped
- Mint leaves - 30 grams, chopped
- Roasted peanuts - 30 grams, crushed
- Lettuce leaves - 4, for serving
Steps
- Start by boiling a pot of water. Once boiling, add the pork tenderloin and cook for about 15 minutes until fully cooked through. Remove and let it cool before slicing it thinly.
- In a mixing bowl, combine lime juice, fish sauce, palm sugar, and chili flakes to create the dressing. Stir until the palm sugar dissolves completely.
- In a large bowl, add the sliced pork, shallots, cherry tomatoes, cucumber, cilantro, and mint leaves. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
- Taste and adjust seasoning if necessary, adding more lime juice or fish sauce according to your preference.
- Serve the salad on a bed of lettuce leaves and sprinkle crushed roasted peanuts on top for added crunch.
