- Red chili (fresh) - 1, finely chopped
- Cilantro (fresh) - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Shallot - 1 small, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Roasted peanuts - 2 tablespoons, crushed
Steps
- Preheat the oven to 200°C (390°F).
- Wash and peel the yam, then cut it into bite-sized cubes.
- Spread the yam cubes on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly caramelized.
- While the yam is roasting, prepare the dressing by whisking together lime juice, fish sauce, and palm sugar in a small bowl until well combined.
- In a large bowl, combine the roasted yam, chopped cilantro, mint leaves, sliced shallot, halved cherry tomatoes, and diced cucumber.
- Pour the dressing over the salad ingredients and gently toss to combine.
- Sprinkle the crushed roasted peanuts on top before serving.
