Ingredients

  • Yam (sweet potato) - 250 grams
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Palm sugar - 1 teaspoon
  • Red chili (fresh) - 1, finely chopped
  • Cilantro (fresh) - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Shallot - 1 small, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Roasted peanuts - 2 tablespoons, crushed

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash and peel the yam, then cut it into bite-sized cubes.
  3. Spread the yam cubes on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly caramelized.
  4. While the yam is roasting, prepare the dressing by whisking together lime juice, fish sauce, and palm sugar in a small bowl until well combined.
  5. In a large bowl, combine the roasted yam, chopped cilantro, mint leaves, sliced shallot, halved cherry tomatoes, and diced cucumber.
  6. Pour the dressing over the salad ingredients and gently toss to combine.
  7. Sprinkle the crushed roasted peanuts on top before serving.
