Ingredients

  • Chicken breast - 200 grams
  • Coconut milk - 100 ml
  • Red curry paste - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Thai basil - 2 tablespoons, chopped
  • Peanuts - 30 grams, crushed
  • Lettuce leaves - 4 large, for serving
  • Chili flakes - to taste

Steps

  1. In a small saucepan, combine coconut milk and red curry paste over medium heat. Stir until well mixed and bring to a simmer.
  2. Add the chicken breast to the saucepan and cook for about 15 minutes, or until fully cooked through. Remove from heat and let cool before shredding.
  3. In a mixing bowl, combine lime juice, fish sauce, and honey. Whisk until well combined to create the dressing.
  4. In a large bowl, combine shredded chicken, cucumber, carrot, red onion, cilantro, and Thai basil. Pour the dressing over the salad and toss gently to combine.
  5. Prepare the serving plates by laying out the lettuce leaves. Spoon the salad mixture onto the lettuce leaves.
  6. Sprinkle crushed peanuts and chili flakes over the top as desired. Serve immediately.
