- Coconut milk - 100 ml
- Red curry paste - 1 tablespoon
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Honey - 1 teaspoon
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red onion - 1 small, thinly sliced
- Fresh cilantro - 2 tablespoons, chopped
- Thai basil - 2 tablespoons, chopped
- Peanuts - 30 grams, crushed
- Lettuce leaves - 4 large, for serving
- Chili flakes - to taste
Steps
- In a small saucepan, combine coconut milk and red curry paste over medium heat. Stir until well mixed and bring to a simmer.
- Add the chicken breast to the saucepan and cook for about 15 minutes, or until fully cooked through. Remove from heat and let cool before shredding.
- In a mixing bowl, combine lime juice, fish sauce, and honey. Whisk until well combined to create the dressing.
- In a large bowl, combine shredded chicken, cucumber, carrot, red onion, cilantro, and Thai basil. Pour the dressing over the salad and toss gently to combine.
- Prepare the serving plates by laying out the lettuce leaves. Spoon the salad mixture onto the lettuce leaves.
- Sprinkle crushed peanuts and chili flakes over the top as desired. Serve immediately.
