Ingredients

  • Corn kernels - 200 grams (fresh or frozen)
  • Red bell pepper - 50 grams, finely diced
  • Green onions - 2 stalks, finely chopped
  • Fresh cilantro - 15 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon (optional, for Paleo adherence use coconut aminos)
  • Chili flakes - 1/2 teaspoon (adjust to taste)
  • Coconut oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw and drain the corn.
  2. In a skillet, heat the coconut oil over medium heat. Add the corn kernels and sauté for about 5 minutes until they are slightly golden.
  3. Add the diced red bell pepper and continue to sauté for another 3-4 minutes until the peppers are tender.
  4. Remove the skillet from heat and let the mixture cool slightly.
  5. In a large bowl, combine the sautéed corn and bell pepper with chopped green onions, cilantro, lime juice, fish sauce (or coconut aminos), chili flakes, salt, and pepper. Mix well to combine.
  6. Serve the Yam Khao Pod warm or at room temperature as a side dish.
