Ingredients
- Corn kernels - 200 grams (fresh or frozen)
- Red bell pepper - 50 grams, finely diced
- Green onions - 2 stalks, finely chopped
- Fresh cilantro - 15 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon (optional, for Paleo adherence use coconut aminos)
- Chili flakes - 1/2 teaspoon (adjust to taste)
- Coconut oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw and drain the corn.
- In a skillet, heat the coconut oil over medium heat. Add the corn kernels and sauté for about 5 minutes until they are slightly golden.
- Add the diced red bell pepper and continue to sauté for another 3-4 minutes until the peppers are tender.
- Remove the skillet from heat and let the mixture cool slightly.
- In a large bowl, combine the sautéed corn and bell pepper with chopped green onions, cilantro, lime juice, fish sauce (or coconut aminos), chili flakes, salt, and pepper. Mix well to combine.
- Serve the Yam Khao Pod warm or at room temperature as a side dish.
