Ingredients

  • Sticky rice - 100 grams

  • Cucumber - 1, diced
  • Cherry tomatoes - 100 grams, halved
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Thai chili - 1, finely chopped
  • Peanuts - 20 grams, crushed

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a small bowl, mix the lime juice, fish sauce, brown sugar, and chopped Thai chili to create the dressing.
  3. Heat a non-stick pan over medium heat and add the sliced pork. Cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
  4. Steam the soaked sticky rice for about 20 minutes or until tender. Fluff with a fork and let it cool slightly.
  5. In a large mixing bowl, combine the cooked pork, shallots, cucumber, cherry tomatoes, and cilantro.
  6. Add the dressing to the bowl and toss everything together until well coated.
  7. Serve the salad on a plate, topped with the steamed sticky rice and crushed peanuts.
