- Sticky rice - 100 grams
- Cucumber - 1 medium, diced
- Cherry tomatoes - 100 grams, halved

- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Coconut sugar - 1 teaspoon (optional)
- Chili flakes - 1/2 teaspoon

Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo steamer or a rice cooker for about 25 minutes, or until tender and sticky.
- While the rice is cooking, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and chopped cilantro.
- In a small bowl, whisk together lime juice, fish sauce, coconut sugar (if using), chili flakes, and salt to create the dressing.
- Once the sticky rice is cooked, let it cool slightly before adding it to the vegetable mixture.
- Pour the dressing over the salad and toss gently to combine all ingredients.
- Serve the Yam Khao Niew immediately, garnished with extra cilantro if desired.
