Ingredients

  • Sticky rice - 100 grams
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Coconut sugar - 1 teaspoon (optional)
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer or a rice cooker for about 25 minutes, or until tender and sticky.
  3. While the rice is cooking, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
  4. In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and chopped cilantro.
  5. In a small bowl, whisk together lime juice, fish sauce, coconut sugar (if using), chili flakes, and salt to create the dressing.
  6. Once the sticky rice is cooked, let it cool slightly before adding it to the vegetable mixture.
  7. Pour the dressing over the salad and toss gently to combine all ingredients.
  8. Serve the Yam Khao Niew immediately, garnished with extra cilantro if desired.
