- Mushrooms - 150 g, sliced (shiitake or button)
- Cherry tomatoes - 100 g, halved
- Tofu - 200 g, cubed
- Thai chili peppers - 2, sliced (adjust for spice preference)
- Soy sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Cilantro - 20 g, chopped
- Green onions - 2, chopped
- Sugar - 1 teaspoon
Steps
- In a pot, bring the vegetable broth to a gentle boil over medium heat.
- Add the chopped lemongrass, galangal slices, and torn kaffir lime leaves to the broth. Let it simmer for about 5 minutes to infuse the flavors.
- Add the sliced mushrooms and halved cherry tomatoes to the pot. Cook for another 5 minutes until the mushrooms are tender.
- Carefully add the cubed tofu and sliced Thai chili peppers to the soup. Cook for an additional 3-4 minutes.
- Stir in the soy sauce, lime juice, and sugar. Adjust seasoning as needed.
