  • Kaffir lime leaves - 4 leaves, torn
  • Mushrooms - 150 g, sliced (shiitake or button)
  • Cherry tomatoes - 100 g, halved
  • Tofu - 200 g, cubed
  • Thai chili peppers - 2, sliced (adjust for spice preference)
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 20 g, chopped
  • Green onions - 2, chopped
  • Sugar - 1 teaspoon

Steps

  1. In a pot, bring the vegetable broth to a gentle boil over medium heat.
  2. Add the chopped lemongrass, galangal slices, and torn kaffir lime leaves to the broth. Let it simmer for about 5 minutes to infuse the flavors.
  3. Add the sliced mushrooms and halved cherry tomatoes to the pot. Cook for another 5 minutes until the mushrooms are tender.
  4. Carefully add the cubed tofu and sliced Thai chili peppers to the soup. Cook for an additional 3-4 minutes.
