Ingredients

  • Tofu - 200 grams, firm and cubed
  • Mushrooms - 100 grams, sliced
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 100 grams, halved
  • Lemongrass - 1 stalk, chopped
  • Kaffir lime leaves - 3 leaves, torn
  • Galangal - 1 inch, sliced (or ginger if unavailable)
  • Thai bird's eye chili - 2, chopped (adjust for spice preference)
  • Vegetable broth - 250 ml
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Vegetable oil - 1 tablespoon (for grilling)
  • Salt - to taste

Steps

  1. In a bowl, combine the chopped lemongrass, kaffir lime leaves, sliced galangal, bird's eye chili, vegetable broth, soy sauce, and lime juice to create the marinade.
  2. Add the cubed tofu and sliced vegetables (mushrooms, bell pepper, zucchini, and cherry tomatoes) into the marinade, ensuring everything is well coated. Let it marinate for at least 15 minutes.
  3. Preheat a grill or BBQ to medium-high heat and brush with vegetable oil.
  4. Thread the marinated tofu and vegetables onto skewers, alternating between the tofu and various vegetables.
