- Kaffir lime leaves - 4 leaves, torn
- Mushrooms (shiitake or button) - 150 grams, sliced
- Tofu - 100 grams, cubed
- Cherry tomatoes - 100 grams, halved
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Fresh cilantro - a handful, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Chili paste (Nam Prik Pao) - 1 tablespoon (adjust to taste)
- Salt - to taste
Steps
- In a pot, combine the coconut milk and vegetable broth, and bring to a gentle simmer over medium heat.
- Add the smashed lemongrass, sliced galangal, and torn kaffir lime leaves to the pot, and let it simmer for about 5 minutes to infuse the flavors.
- Stir in the sliced mushrooms, cubed tofu, julienned carrot, and sliced red bell pepper, and cook for another 5-7 minutes until the vegetables are tender.
- Add the halved cherry tomatoes, soy sauce, and chili paste to the pot, and stir well to combine.
- Allow the soup to simmer for an additional 3-5 minutes, then remove from heat.
- Stir in the lime juice and adjust seasoning with salt if necessary.
- Serve hot, garnished with fresh cilantro.
