Ingredients

  • Coconut milk - 400 ml
  • Vegetable broth - 250 ml
  • Lemongrass - 1 stalk, trimmed and smashed
  • Galangal - 1 inch piece, sliced (or ginger as a substitute)
  • Kaffir lime leaves - 4 leaves, torn
  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Tofu - 100 grams, cubed
  • Cherry tomatoes - 100 grams, halved
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Fresh cilantro - a handful, chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Chili paste (Nam Prik Pao) - 1 tablespoon (adjust to taste)
  • Salt - to taste

Steps

  1. In a pot, combine the coconut milk and vegetable broth, and bring to a gentle simmer over medium heat.
  2. Add the smashed lemongrass, sliced galangal, and torn kaffir lime leaves to the pot, and let it simmer for about 5 minutes to infuse the flavors.
  3. Stir in the sliced mushrooms, cubed tofu, julienned carrot, and sliced red bell pepper, and cook for another 5-7 minutes until the vegetables are tender.
  4. Add the halved cherry tomatoes, soy sauce, and chili paste to the pot, and stir well to combine.
  5. Allow the soup to simmer for an additional 3-5 minutes, then remove from heat.
  6. Stir in the lime juice and adjust seasoning with salt if necessary.
  7. Serve hot, garnished with fresh cilantro.
