Ingredients

  • Firm tofu - 200 grams
  • Red bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Red onion - 1 medium, cut into chunks
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Curry powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Coconut milk - 100 ml
  • Peanut butter - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Skewers - 4-6 (soaked in water if wooden)

Steps

  1. Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
  2. In a bowl, mix vegetable oil, soy sauce, curry powder, minced garlic, and lime juice. Add the tofu cubes and marinate for at least 15 minutes.
  3. While the tofu is marinating, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion into chunks.
  4. Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and vegetables.
  5. Preheat a grill or grill pan over medium heat. Once hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. In a small saucepan, combine coconut milk, peanut butter, brown sugar, and chili flakes (if using). Heat over low heat, stirring until smooth and creamy. Remove from heat.
  7. Serve the skewers hot with the peanut sauce drizzled over them or on the side for dipping.
