- Firm tofu - 200 grams
- Red bell pepper - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced
- Red onion - 1 medium, cut into chunks
- Vegetable oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Curry powder - 1 teaspoon
- Garlic - 2 cloves, minced
- Coconut milk - 100 ml
- Peanut butter - 3 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Chili flakes - 1/2 teaspoon (optional)
- Skewers - 4-6 (soaked in water if wooden)
Steps
- Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, mix vegetable oil, soy sauce, curry powder, minced garlic, and lime juice. Add the tofu cubes and marinate for at least 15 minutes.
- While the tofu is marinating, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion into chunks.
- Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and vegetables.
- Preheat a grill or grill pan over medium heat. Once hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- In a small saucepan, combine coconut milk, peanut butter, brown sugar, and chili flakes (if using). Heat over low heat, stirring until smooth and creamy. Remove from heat.
- Serve the skewers hot with the peanut sauce drizzled over them or on the side for dipping.
