Ingredients

  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Thai bird's eye chili - 2, finely chopped (adjust to taste)
  • Tofu - 200 grams, firm, diced
  • Red bell pepper - 1, sliced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fresh Thai basil leaves - 1 cup, packed
  • Cooked jasmine rice - 2 cups, for serving

Steps

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and chopped bird's eye chili, and stir-fry for about 30 seconds until fragrant.
  3. Add the diced tofu to the pan and cook for about 5 minutes until golden brown on all sides.
  4. Stir in the sliced red bell pepper and green beans, cooking for an additional 3-4 minutes until the vegetables are tender but still crisp.
  5. In a small bowl, mix the soy sauce, oyster sauce, and sugar, then pour the sauce over the stir-fried tofu and vegetables.
  6. Toss everything together to ensure even coating and cook for another 2 minutes.
  7. Remove from heat and fold in the fresh Thai basil leaves until just wilted.
  8. Serve hot over a bed of jasmine rice.
