- Firm tofu - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red chili - 1, finely chopped (adjust to taste)
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, sliced
- Soy sauce - 2 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Sugar - 1 teaspoon
- Basil leaves - 1 cup, packed (Thai basil preferred)
- Cooked jasmine rice - 2 cups, for serving
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into small cubes.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and chopped red chili, stir-frying for about 30 seconds until fragrant.
- Add the cubed tofu to the pan, cooking until golden brown on all sides, about 5-7 minutes.
- Stir in the sliced bell pepper, julienned carrot, and sliced zucchini, cooking for another 3-4 minutes until the vegetables are tender.
- In a small bowl, mix the soy sauce, vegetarian oyster sauce, and sugar, then pour it over the tofu and vegetables in the pan.
- Add the basil leaves and toss everything together for another minute until the basil is wilted.
- Serve the Vegetarian Moo Pad Krapow over cooked jasmine rice.
