Ingredients

  • Firm tofu - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili - 1, finely chopped (adjust to taste)
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, sliced
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Basil leaves - 1 cup, packed (Thai basil preferred)
  • Cooked jasmine rice - 2 cups, for serving

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into small cubes.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the minced garlic and chopped red chili, stir-frying for about 30 seconds until fragrant.
  4. Add the cubed tofu to the pan, cooking until golden brown on all sides, about 5-7 minutes.
  5. Stir in the sliced bell pepper, julienned carrot, and sliced zucchini, cooking for another 3-4 minutes until the vegetables are tender.
  6. In a small bowl, mix the soy sauce, vegetarian oyster sauce, and sugar, then pour it over the tofu and vegetables in the pan.
  7. Add the basil leaves and toss everything together for another minute until the basil is wilted.
  8. Serve the Vegetarian Moo Pad Krapow over cooked jasmine rice.
