Ingredients

  • Coconut milk - 400 ml
  • Vegetable oil - 2 tablespoons
  • Massaman curry paste - 3 tablespoons
  • Tofu (firm) - 250 grams, cubed
  • Potato - 1 medium (about 150 grams), diced
  • Carrot - 1 medium (about 100 grams), sliced
  • Red bell pepper - 1 medium (about 150 grams), sliced
  • Green beans - 100 grams, trimmed
  • Peanuts (unsalted) - 50 grams, crushed
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the Massaman curry paste to the pan and sauté for about 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir to combine with the curry paste.
  4. Add the cubed tofu, diced potato, and sliced carrot to the pan. Stir well and let it simmer for about 10 minutes.
  5. After 10 minutes, add the sliced red bell pepper and trimmed green beans. Continue to cook for another 5-7 minutes until all vegetables are tender.
  6. Stir in the soy sauce, brown sugar, and lime juice. Mix well and let it cook for an additional 2 minutes.
  7. Remove from heat and serve hot, garnished with crushed peanuts and fresh cilantro.
