- Coconut milk - 400 ml
- Vegetable oil - 2 tablespoons
- Massaman curry paste - 3 tablespoons
- Tofu (firm) - 250 grams, cubed
- Potato - 1 medium (about 150 grams), diced
- Carrot - 1 medium (about 100 grams), sliced
- Red bell pepper - 1 medium (about 150 grams), sliced
- Green beans - 100 grams, trimmed
- Peanuts (unsalted) - 50 grams, crushed
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Heat the vegetable oil in a large pan over medium heat.
- Add the Massaman curry paste to the pan and sauté for about 1-2 minutes until fragrant.
- Pour in the coconut milk and stir to combine with the curry paste.
- Add the cubed tofu, diced potato, and sliced carrot to the pan. Stir well and let it simmer for about 10 minutes.
- After 10 minutes, add the sliced red bell pepper and trimmed green beans. Continue to cook for another 5-7 minutes until all vegetables are tender.
- Stir in the soy sauce, brown sugar, and lime juice. Mix well and let it cook for an additional 2 minutes.
- Remove from heat and serve hot, garnished with crushed peanuts and fresh cilantro.
