Ingredients

  • Firm tofu - 400 grams
  • Coconut milk - 100 ml
  • Soy sauce - 30 ml
  • Lime juice - 15 ml
  • Brown sugar - 15 grams
  • Garlic - 3 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Turmeric powder - 1 teaspoon
  • Cilantro - 30 grams, chopped
  • Thai basil - 30 grams, chopped
  • Red bell pepper - 1, sliced
  • Zucchini - 1, sliced
  • Cherry tomatoes - 200 grams, halved
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for about 30 minutes to remove excess moisture, then cut it into thick slices.
  2. In a bowl, mix coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, turmeric powder, and a pinch of salt and pepper to create the marinade.
  3. Add the tofu slices to the marinade, making sure they are well coated. Let them marinate for at least 30 minutes.
  4. While the tofu is marinating, prepare the vegetables by slicing the red bell pepper and zucchini, and halving the cherry tomatoes.
  5. Preheat a grill or grill pan over medium heat. Once hot, brush with olive oil.
  6. Remove the tofu from the marinade and place it on the grill. Cook for about 4-5 minutes on each side until grill marks appear and the tofu is heated through.
  7. During the last few minutes of grilling, add the sliced vegetables to the grill and cook until tender and slightly charred, about 5-7 minutes.
  8. Once everything is cooked, remove from the grill and garnish with fresh cilantro and Thai basil.
  9. Serve the grilled tofu and vegetables hot with a side of steamed jasmine rice or sticky rice.
