Ingredients
- Firm tofu - 400 grams
- Coconut milk - 100 ml
- Soy sauce - 30 ml
- Lime juice - 15 ml
- Brown sugar - 15 grams
- Garlic - 3 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Turmeric powder - 1 teaspoon
- Cilantro - 30 grams, chopped
- Thai basil - 30 grams, chopped
- Red bell pepper - 1, sliced
- Zucchini - 1, sliced
- Cherry tomatoes - 200 grams, halved
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for about 30 minutes to remove excess moisture, then cut it into thick slices.
- In a bowl, mix coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, turmeric powder, and a pinch of salt and pepper to create the marinade.
- Add the tofu slices to the marinade, making sure they are well coated. Let them marinate for at least 30 minutes.
- While the tofu is marinating, prepare the vegetables by slicing the red bell pepper and zucchini, and halving the cherry tomatoes.
- Preheat a grill or grill pan over medium heat. Once hot, brush with olive oil.
- Remove the tofu from the marinade and place it on the grill. Cook for about 4-5 minutes on each side until grill marks appear and the tofu is heated through.
- During the last few minutes of grilling, add the sliced vegetables to the grill and cook until tender and slightly charred, about 5-7 minutes.
- Once everything is cooked, remove from the grill and garnish with fresh cilantro and Thai basil.
- Serve the grilled tofu and vegetables hot with a side of steamed jasmine rice or sticky rice.
