  • 2 whole wheat burger buns

  • 1/4 cup Thai sweet chili sauce
  • 1/4 cup mayonnaise

Steps

  1. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.
  2. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.
  3. Heat about 2 inches of oil in a deep skillet or pot over medium-high heat.
  4. Dip the sliced zucchini, carrot, sweet potato, and bell pepper into the batter, allowing excess to drip off.
  5. Carefully place the battered vegetables into the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per batch.
  6. Remove the tempura vegetables and drain on paper towels to absorb excess oil.
  7. Toast the whole wheat burger buns lightly on a skillet or grill.
