Ingredients

  • Zucchini - 100 grams
  • Carrot - 100 grams
  • Sweet potato - 100 grams
  • Green beans - 100 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Baking powder - 1 teaspoon
  • Ice water - 150 ml
  • Salt - 1/2 teaspoon
  • Vegetable oil (for frying) - 500 ml

Steps

  1. Prepare the vegetables by washing and cutting them into bite-sized pieces.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt.
  3. Gradually add ice water to the dry ingredients, mixing gently until just combined. The batter should be lumpy and not overly smooth.
  4. Heat the vegetable oil in a deep pan or fryer to 180°C (350°F).
  5. Dip each piece of vegetable into the batter, allowing excess to drip off, then carefully place it in the hot oil.
  6. Fry the vegetable pieces in batches for about 2-4 minutes or until they are golden brown and crispy.
  7. Remove the tempura from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Serve hot with a dipping sauce made from soy sauce, a splash of rice vinegar, and a sprinkle of sesame seeds.
