- Zucchini - 100 grams

- All-purpose flour - 100 grams
- Cornstarch - 50 grams
- Baking powder - 1 teaspoon
- Ice water - 150 ml
- Salt - 1/2 teaspoon
- Vegetable oil (for frying) - 500 ml
Steps
- Prepare the vegetables by washing and cutting them into bite-sized pieces.
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt.
- Gradually add ice water to the dry ingredients, mixing gently until just combined. The batter should be lumpy and not overly smooth.
- Heat the vegetable oil in a deep pan or fryer to 180°C (350°F).
- Dip each piece of vegetable into the batter, allowing excess to drip off, then carefully place it in the hot oil.
- Fry the vegetable pieces in batches for about 2-4 minutes or until they are golden brown and crispy.
- Remove the tempura from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with a dipping sauce made from soy sauce, a splash of rice vinegar, and a sprinkle of sesame seeds.
