  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Spring roll wrappers - 4
  • Vegetable oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Cilantro - a handful, for garnish
  • Thai chili sauce - for serving

Steps

  1. In a large bowl, combine grated carrot, shredded cabbage, diced bell pepper, chopped mushrooms, green onions, minced garlic, and grated ginger.
  2. Add soy sauce and cornstarch to the vegetable mixture, and mix until well combined.
  3. Place one spring roll wrapper on a clean surface, add a spoonful of the vegetable mixture in the center, and fold the sides over the filling, then roll tightly from the bottom to the top. Repeat with the remaining wrappers and filling.
  4. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the spring roll burgers and fry until golden brown and crispy, about 2-3 minutes per side.
  5. Remove the burgers from the pan and place them on paper towels to absorb excess oil.
  6. To assemble the burger, place a lettuce leaf on the bottom half of each burger bun, add the spring roll burger, and top with fresh cilantro and a drizzle of Thai chili sauce. Place the top bun over the burger.
  7. Serve immediately with extra Thai chili sauce on the side.
