Vegetable Samosas

Ingredients

  • all-purpose flour - 200 grams
  • water - 100 ml
  • salt - 1/2 teaspoon
  • oil - 2 tablespoons (for dough)
  • potato - 150 grams, boiled and mashed
  • green peas - 100 grams, cooked
  • carrot - 50 grams, finely chopped
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • ginger - 1 teaspoon, grated
  • curry powder - 1 teaspoon
  • coriander powder - 1 teaspoon
  • fresh cilantro - 2 tablespoons, chopped
  • lime juice - 1 tablespoon
  • oil - for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add 2 tablespoons of oil and mix well. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
  2. In a pan, heat a tablespoon of oil over medium heat. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
  3. Add the boiled and mashed potato, cooked green peas, chopped carrot, curry powder, and coriander powder to the pan. Mix well and cook for an additional 5 minutes. Stir in fresh cilantro and lime juice. Remove from heat and let the filling cool.
  4. Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it into a circle (about 10 cm in diameter).
  5. Cut each circle in half to form two semi-circles. Take one semi-circle and form a cone by folding it along the flat edge, sealing the edge with a little water.
  6. Fill the cone with the vegetable filling and seal the open edge by pressing it together. Repeat for all semi-circles.
  7. In a deep frying pan, heat oil over medium heat. Carefully add the samosas in batches and fry until they are golden brown and crispy, about 4-5 minutes per batch.
  8. Drain on paper towels and serve hot with your favorite dipping sauce.
