Ingredients
- all-purpose flour - 200 grams
- water - 100 ml
- salt - 1/2 teaspoon
- oil - 2 tablespoons (for dough)
- potato - 150 grams, boiled and mashed
- green peas - 100 grams, cooked
- carrot - 50 grams, finely chopped
- onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, grated
- curry powder - 1 teaspoon
- coriander powder - 1 teaspoon
- fresh cilantro - 2 tablespoons, chopped
- lime juice - 1 tablespoon
- oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add 2 tablespoons of oil and mix well. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
- In a pan, heat a tablespoon of oil over medium heat. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Add the boiled and mashed potato, cooked green peas, chopped carrot, curry powder, and coriander powder to the pan. Mix well and cook for an additional 5 minutes. Stir in fresh cilantro and lime juice. Remove from heat and let the filling cool.
- Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it into a circle (about 10 cm in diameter).
- Cut each circle in half to form two semi-circles. Take one semi-circle and form a cone by folding it along the flat edge, sealing the edge with a little water.
- Fill the cone with the vegetable filling and seal the open edge by pressing it together. Repeat for all semi-circles.
- In a deep frying pan, heat oil over medium heat. Carefully add the samosas in batches and fry until they are golden brown and crispy, about 4-5 minutes per batch.
- Drain on paper towels and serve hot with your favorite dipping sauce.
