- Glass noodles - 100 grams
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, thinly sliced
- Broccoli - 100 grams, cut into small florets
- Zucchini - 1 small, julienned
- Green onion - 2, chopped
- Garlic - 3 cloves, minced
- Soy sauce - 2 tablespoons
- Oyster sauce (vegan) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Soak the glass noodles in warm water for about 15 minutes or until softened, then drain and set aside.
- In a large pan or wok, heat vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the julienned carrot, bell pepper, broccoli florets, and zucchini to the pan. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Push the vegetables to one side of the pan and add the soaked glass noodles to the other side. Pour soy sauce and vegan oyster sauce over the noodles.
- Toss everything together, mixing the noodles and vegetables evenly. Drizzle with sesame oil and season with salt, black pepper, and chili flakes if using.
- Add chopped green onions and stir-fry for an additional 2 minutes until everything is well combined and heated through.
- Serve hot, garnished with additional green onions if desired.
