Ingredients

  • Glass noodles - 100 grams
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Broccoli - 100 grams, cut into small florets
  • Zucchini - 1 small, julienned
  • Green onion - 2, chopped
  • Garlic - 3 cloves, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegan) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. Soak the glass noodles in warm water for about 15 minutes or until softened, then drain and set aside.
  2. In a large pan or wok, heat vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the julienned carrot, bell pepper, broccoli florets, and zucchini to the pan. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
  4. Push the vegetables to one side of the pan and add the soaked glass noodles to the other side. Pour soy sauce and vegan oyster sauce over the noodles.
  5. Toss everything together, mixing the noodles and vegetables evenly. Drizzle with sesame oil and season with salt, black pepper, and chili flakes if using.
  6. Add chopped green onions and stir-fry for an additional 2 minutes until everything is well combined and heated through.
  7. Serve hot, garnished with additional green onions if desired.
