Ingredients

  • Cooked rice noodles - 120 grams
  • Firm tofu, crumbled - 150 grams
  • Carrot, grated - 1 medium
  • Red bell pepper, diced - 1/2
  • Green onion, chopped - 2 stalks
  • Cilantro, chopped - 2 tablespoons
  • Peanut butter - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic, minced - 1 clove
  • Ginger, grated - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Burger buns - 2
  • Lettuce leaves - 2

Steps

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a large mixing bowl, combine the crumbled tofu, grated carrot, diced red bell pepper, chopped green onion, chopped cilantro, peanut butter, soy sauce, lime juice, minced garlic, grated ginger, cornstarch, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Form the mixture into two equal-sized patties.
  4. Heat vegetable oil in a skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and firm.
  5. While the patties are cooking, toast the burger buns in a toaster or on a skillet until lightly browned.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, and top with additional cilantro and a drizzle of peanut sauce if desired. Place the top half of the bun on top.
  7. Serve immediately with a side of fresh veggies or fries.
