- Lime juice - 1 tablespoon
- Brown sugar - 1 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
- Crushed peanuts - 2 tablespoons (for garnish)
- Chili flakes - to taste
Steps
- Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced red bell pepper, julienned carrot, and broccoli florets. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together peanut butter, soy sauce, lime juice, and brown sugar until smooth.
- Add the soaked rice noodles to the skillet with the vegetables, then pour the sauce over the top. Toss everything together gently to combine and heat through for another 3-4 minutes.
- Stir in the bean sprouts and chopped green onions just before serving.
