Ingredients

  • Rice noodles - 150 grams

  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Green onions - 3, chopped
  • Bean sprouts - 100 grams
  • Peanut butter - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Crushed peanuts - 2 tablespoons (for garnish)
  • Chili flakes - to taste

Steps

  1. Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper, julienned carrot, and broccoli florets. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together peanut butter, soy sauce, lime juice, and brown sugar until smooth.
  6. Add the soaked rice noodles to the skillet with the vegetables, then pour the sauce over the top. Toss everything together gently to combine and heat through for another 3-4 minutes.
  7. Stir in the bean sprouts and chopped green onions just before serving.
  8. Serve hot, garnished with chopped cilantro, crushed peanuts, and chili flakes to taste.
