- Massaman curry paste - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Peanuts - 30 g, crushed
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Heat the vegetable oil in a large pan over medium heat.
- Add the sliced onion and sauté until translucent, about 3-4 minutes.
- Stir in the Massaman curry paste and cook for another 2 minutes until fragrant.
- Add the diced potatoes and sliced carrots to the pan, stirring to coat with the curry paste.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the chopped bell pepper and green beans, then cover the pan and cook for 15 minutes or until the vegetables are tender.
- Stir in the sugar, soy sauce, and lime juice, adjusting seasoning to taste.
- Serve hot, garnished with crushed peanuts and fresh cilantro.
