Ingredients

  • Coconut milk - 400 ml
  • Potatoes - 200 g, diced
  • Carrots - 100 g, sliced
  • Bell pepper - 100 g, chopped
  • Onion - 1 medium, sliced
  • Green beans - 100 g, trimmed
  • Massaman curry paste - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Peanuts - 30 g, crushed
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the sliced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the Massaman curry paste and cook for another 2 minutes until fragrant.
  4. Add the diced potatoes and sliced carrots to the pan, stirring to coat with the curry paste.
  5. Pour in the coconut milk and bring the mixture to a simmer.
  6. Add the chopped bell pepper and green beans, then cover the pan and cook for 15 minutes or until the vegetables are tender.
  7. Stir in the sugar, soy sauce, and lime juice, adjusting seasoning to taste.
  8. Serve hot, garnished with crushed peanuts and fresh cilantro.
