Ingredients

  • All-purpose flour - 150 grams
  • Coconut oil - 60 grams
  • Salt - 1/2 teaspoon
  • Water - 50 milliliters
  • Potato - 100 grams, diced
  • Carrot - 50 grams, diced
  • Green peas - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Chili flakes - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 teaspoon
  • Oil for frying - as needed

Steps

  1. In a mixing bowl, combine all-purpose flour, coconut oil, and salt. Gradually add water until a dough forms. Knead until smooth, then cover and let it rest for 20 minutes.
  2. In a pan over medium heat, add a splash of oil and sauté the onions until translucent. Add garlic and ginger, cooking for another minute until fragrant.
  3. Add the diced potato, carrot, and green peas to the pan. Sprinkle with curry powder, soy sauce, and chili flakes. Cook until the vegetables are tender, about 5-7 minutes.
  4. Remove the mixture from heat and stir in chopped cilantro and lemon juice. Allow the filling to cool slightly.
  5. Roll out the dough on a floured surface to about 2-3 mm thickness. Cut into circles (about 10 cm in diameter).
  6. Place a spoonful of the vegetable filling in the center of each circle, then fold the dough over and seal the edges by pressing with a fork.
  7. Heat oil in a frying pan over medium heat. Fry the curry puffs until golden brown on both sides, about 3-4 minutes per side.
  8. Remove from oil and drain on paper towels. Serve hot with a side of sweet chili sauce.
