Ingredients
- All-purpose flour - 150 grams
- Coconut oil - 60 grams
- Salt - 1/2 teaspoon
- Water - 50 milliliters
- Potato - 100 grams, diced
- Carrot - 50 grams, diced
- Green peas - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 1 tablespoon
- Soy sauce - 1 tablespoon
- Chili flakes - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 teaspoon
- Oil for frying - as needed
Steps
- In a mixing bowl, combine all-purpose flour, coconut oil, and salt. Gradually add water until a dough forms. Knead until smooth, then cover and let it rest for 20 minutes.
- In a pan over medium heat, add a splash of oil and sauté the onions until translucent. Add garlic and ginger, cooking for another minute until fragrant.
- Add the diced potato, carrot, and green peas to the pan. Sprinkle with curry powder, soy sauce, and chili flakes. Cook until the vegetables are tender, about 5-7 minutes.
- Remove the mixture from heat and stir in chopped cilantro and lemon juice. Allow the filling to cool slightly.
- Roll out the dough on a floured surface to about 2-3 mm thickness. Cut into circles (about 10 cm in diameter).
- Place a spoonful of the vegetable filling in the center of each circle, then fold the dough over and seal the edges by pressing with a fork.
- Heat oil in a frying pan over medium heat. Fry the curry puffs until golden brown on both sides, about 3-4 minutes per side.
- Remove from oil and drain on paper towels. Serve hot with a side of sweet chili sauce.
