Ingredients

  • Firm tofu - 200 grams
  • Vegetable oil - 2 tablespoons
  • Shallots - 2, chopped
  • Garlic - 3 cloves, minced
  • Lemongrass - 1 stalk, chopped and smashed
  • Kaffir lime leaves - 4, torn
  • Galangal - 1 inch, sliced (or ginger if unavailable)
  • Thai red chili - 2, chopped (adjust for spice preference)
  • Vegetable broth - 500 ml
  • Mushrooms - 100 grams, sliced
  • Tomatoes - 1 medium, quartered
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Fresh cilantro - a handful, chopped for garnish
  • Green onions - 2, sliced for garnish

Steps

  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. Heat the vegetable oil in a pot over medium heat. Add the chopped shallots and garlic, sautéing until fragrant and translucent.
  3. Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and chopped Thai red chili. Stir for about 2 minutes to release the flavors.
  4. Pour in the vegetable broth and bring the mixture to a gentle boil.
  5. Add the sliced mushrooms and quartered tomatoes to the pot. Let it simmer for 5-7 minutes until the vegetables are tender.
  6. Carefully add the cubed tofu to the pot and simmer for another 5 minutes to heat through.
  7. Stir in the lime juice and soy sauce, adjusting the taste as needed.
  8. Remove from heat and serve hot, garnished with chopped cilantro and sliced green onions.
