- Chicken or vegetable broth - 500 ml
- Lemongrass - 1 stalk, chopped
- Galangal - 2 slices
- Kaffir lime leaves - 3, torn
- Thai bird chilies - 2, smashed
- Mushrooms - 100 grams, sliced
- Cilantro - 2 tablespoons, chopped
- Green onions - 2, sliced
- Cherry tomatoes - 100 grams, halved
Steps
- In a pot, bring the chicken or vegetable broth to a boil.
- Add the lemongrass, galangal, kaffir lime leaves, and Thai bird chilies to the pot. Simmer for 10 minutes to infuse the flavors.
- Strain the broth to remove the herbs, returning the clear liquid to the pot.
- Add the coconut milk and bring the mixture back to a simmer.
- Add the shrimp, squid, mussels, and mushrooms to the pot. Cook for 5-7 minutes until the seafood is cooked through.
- Stir in the fish sauce, lime juice, and cherry tomatoes. Cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped cilantro and sliced green onions before serving.
