  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Coconut milk - 100 ml
  • Chicken or vegetable broth - 500 ml
  • Lemongrass - 1 stalk, chopped
  • Galangal - 2 slices
  • Kaffir lime leaves - 3, torn
  • Thai bird chilies - 2, smashed
  • Mushrooms - 100 grams, sliced
  • Cilantro - 2 tablespoons, chopped
  • Green onions - 2, sliced
  • Cherry tomatoes - 100 grams, halved

Steps

  1. In a pot, bring the chicken or vegetable broth to a boil.
  2. Add the lemongrass, galangal, kaffir lime leaves, and Thai bird chilies to the pot. Simmer for 10 minutes to infuse the flavors.
  3. Strain the broth to remove the herbs, returning the clear liquid to the pot.
  4. Add the coconut milk and bring the mixture back to a simmer.
  5. Add the shrimp, squid, mussels, and mushrooms to the pot. Cook for 5-7 minutes until the seafood is cooked through.
  6. Stir in the fish sauce, lime juice, and cherry tomatoes. Cook for an additional 2-3 minutes.
  7. Remove from heat and garnish with chopped cilantro and sliced green onions before serving.
