- Lemongrass (chopped) - 1 stalk
- Kaffir lime leaves - 3 leaves
- Galangal (sliced) - 1 inch
- Thai bird's eye chili (sliced) - 1
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Fresh cilantro (chopped) - 2 tablespoons
- Green onion (sliced) - 2 tablespoons
- Olive oil - 1 tablespoon
Steps
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat and add the chopped lemongrass, sliced galangal, and bird's eye chili. Sauté for 2-3 minutes until fragrant.
- Add the diced tomato and sliced mushrooms to the pan, cooking for an additional 4-5 minutes until softened.
- Pour in the coconut milk and bring to a simmer. Add the kaffir lime leaves and fish sauce, stirring to combine.
- Add the shrimp to the pan and cook for about 3-4 minutes, or until they turn pink and are cooked through.
- Stir in the lime juice and cooked spaghetti, tossing to combine all ingredients evenly.
- Remove from heat and garnish with fresh cilantro and green onion before serving.
