  • Mushrooms (sliced) - 100 grams
  • Lemongrass (chopped) - 1 stalk
  • Kaffir lime leaves - 3 leaves
  • Galangal (sliced) - 1 inch
  • Thai bird's eye chili (sliced) - 1
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Green onion (sliced) - 2 tablespoons
  • Olive oil - 1 tablespoon

Steps

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat and add the chopped lemongrass, sliced galangal, and bird's eye chili. Sauté for 2-3 minutes until fragrant.
  3. Add the diced tomato and sliced mushrooms to the pan, cooking for an additional 4-5 minutes until softened.
  4. Pour in the coconut milk and bring to a simmer. Add the kaffir lime leaves and fish sauce, stirring to combine.
  5. Add the shrimp to the pan and cook for about 3-4 minutes, or until they turn pink and are cooked through.
  6. Stir in the lime juice and cooked spaghetti, tossing to combine all ingredients evenly.
  7. Remove from heat and garnish with fresh cilantro and green onion before serving.
